Just tap on the profile name in the top left corner of the Main Menu. That will take you to the Profile Selection Screen, where you can select the profile that you want to play as (and create new ones, if you like).
If you want to play as Anonymous, just select the built-in Guest profile (but note that you can’t log into the Forums or log high scores with that profile).

The profile that I use doesn’t appear at the top left? It just says ‘create profile’ and because of this I can’t use my custom team
